Vegan Breakfast Protein Muffins for glowing skin

My oh my... The recipe that I’m sharing with you today is my all-time favorite breakfast or lunch item. Sweet, high in protein, fiber, vegan and antioxidants. Plus;  it has a soft and fluffy inside with the perfect amount of crunch on the outside. Imagine putting your teeth into the yummiest blueberry muffin, but then the best one out there, as it is packed with ingredients that are nourishing both for your body and that gorgeous, glowing skin.

Last summer, I started my mission to eat 120-140 grams of protein each day. This means, I make sure to consume at least 30-50 grams of protein during each meal. I created this vegan recipe for those mornings when I crave a sweet breakfast instead of a savory one. This is simply the perfect recipe because of its high nutritional value that helps maintain a beautiful skin complexion as a result of the high fiber and antioxidant levels. And of course the recipe ‘Breakfast Protein Muffins for glowing skin’ got its name because of high protein levels: each muffin contains 10 grams of protein. 


I’ve tried different vegan protein powders in this recipe for glowing skin and they all bring their unique flavor and texture to the muffin. For me, the perfect mix turns out to be a blend of soy and hemp protein powders as it gives these muffins the perfect taste and best crunch on the outside.  


The highly nutritional ingredients for Vegan Breakfast Protein Muffins

Let's have a closer look at the powerful ingredients that help our skin looking radiant:  


  • Chia Seeds: Chia seeds are rich in omega-3 fatty acids, which have anti-inflammatory properties. These fatty acids may help maintain skin integrity and hydration, potentially reducing inflammation and promoting a healthy complexion. 

  • Flax Seeds: Flax seeds are also high in omega-3 fatty acids, contributing to their anti-inflammatory effects. Additionally, they contain lignans, compounds with antioxidant properties that may help protect the skin from oxidative stress and support overall skin health. 

  • Blueberries: Blueberries are packed with antioxidants, particularly anthocyanins, which have been linked to anti-aging effects and protection against oxidative stress. These antioxidants may contribute to maintaining skin elasticity and reducing signs of aging. 

  • Cinnamon: Cinnamon has anti-inflammatory and antioxidant properties. Some studies suggest that eating foods rich in antioxidants may help improve skin health by reducing inflammation and protecting against oxidative damage. Cinnamon also helps to lower blood sugar levels.  

 

Ingredients for Vegan Breakfast Protein Muffins for Glowing Skin

This recipe makes for 3 large muffins (10 grams of protein each) or 6 smaller muffins (5 grams of protein each). You can multiply or divide this recipe for more or less muffins.  


  • 15 grams of soy protein powder  

  • 15 grams of hemp protein powder 

  • 1 large (preferably well-ripened) banana 

  • 45 grams of oats 

  • 10 grams of chia seeds 

  • 10 grams of flax seeds 

  • 1 teaspoon baking powder 

  • 1/3 teaspoon baking soda 

  • 100 grams of frozen blueberries 

  • 1 teaspoon cinnamon 

  • 1 teaspoon vanilla  

  • 2 tablespoons plant-based milk of choice 

  • Plant-based butter to grease the muffin tin 

  

  • Optional; add nuts, dates, maple syrup to the mixture for extra bite and sweetness


Instructions - how to make Vegan Breakfast Protein Muffins for Glowing Skin

Preheat the oven at 180 degrees Celsius. Grease the muffin tins with the butter. Start by grinding the oats and then add all the ingredients except the blueberries into a blender, blend it all and then pour the mixture into the muffin tin. Push the blueberries inside of the mixture and place it in the oven for 25-30 minutes until they are perfectly soft and crunchy.


During my cheat days, I like to add some nuts and dates or maple syrup. These muffins also make for a perfect mid-afternoon snack or even as a tasty dessert.  

 

Tip: As this recipe contains oats and fruits from sugar, I always drink a glass of diluted apple cider vinegar to make sure my glucose levels don’t spike. (I will share more about balancing out glucose in a following blog.)
